Tuna Cakes


Here is dinner!


Here are the Tuna cakes after they were finished cooking.

I have a can of tuna in the cupboard that I wanted to use up.  I saw a recipe for "Tuna cakes" and knew that I had to try to make it.  It's supposed to be similar to crab cakes, which I love, but using Tuna!

I didn't have any Worcestershire sauce, so I used soy sauce.  Michele said that I could use soy sauce instead.  I also didn't have any Old Bay Seasoning, so I used Grizzly Joe instead.

This tasted mainly like Tuna and soy sauce to me.  I think that part of the problem is that the recipe says to use the Tuna undrained.  I'm not sure why.  The Tuna cakes came out rather watery.  If I made this again, I would definitely drain the tuna before using it.

Sour Cream Noodle Bake


Mike wanted to make more peach muffins, which require sour cream for some reason.  I told him that we didn't have any sour cream (we rarely have any since he hates it).  As it turns out, we already had a container.  Now I had to find a way to get rid of two containers of sour cream, by hiding them in dishes, since Mike won't even touch a dish if he thinks sour cream may have been near it in the refrigerator!

Since Isaac and Rebekka were packing for their move to Louisiana, I thought it would be nice to make them some food.  I found a recipe on the Pioneer Woman's website for Sour Cream Noodle Bake.

Unfortunately I informed Mike that I wanted to make this dish in order to get rid of the sour cream.  He thought I was trying to be be nice and help Isaac and Rebekka.

Even though the recipe said that it served 8, it looked a little small, so I ended up doubling the recipe, since we figured that we'd be feeding 8 people, including 2 teenage boys who would have been hungry from packing and moving furniture.  As it turns out we had just enough sour cream to make 2 batches of the peach muffins and double this recipe.

I didn't have any egg noodles, so I used small shells instead.  I would've used Farfelle, but I needed a pound of noodles, and Mike had used some for his pesto pasta the day before.

The dish itself was average.  The noodles came out a little soft after the pasta had been baked.  I tasted the meat sauce while it was cooking.  It was pretty tasty!

Beef Stroganoff


I've made a number of recipes from ateaspoonofhappiness.com, and I've been pretty happy with the results of most of the recipes.  One issue I have with the recipes on this website is that the serving sizes are huge.  A recipe that says it "serves 4" would probably feed 4 sumo wrestlers with food leftover.

I made three quarters of half of this recipe, or  three eighths of the recipe.  I bought about three quarters of a pound of beef, and I wanted to use it all.  I also bought a 12 ounce package of noodles, so it worked out.  I also didn't have beef broth, so I used chicken bouillon instead.

I was pretty disappointed with the Beef Stroganoff recipe.  It was edible at times, but other times I had to force myself to finish it.  Although I will finish the leftovers, I won't be making this recipe again.  There was too much of an onion flavor in it.  There was no other seasoning on the beef.

Peach Oatmeal Muffins


I had some white peaches in the freezer from when our white peach tree was in season, and I had more white peaches than I could eat.  I figured that I would just use them for smoothies.  I was looking online and found a recipe for Peach Oatmeal Muffins.

It looked simple enough, and I figured that I could use the white peaches from the freezer.  As it turns out, Mike volunteered to make it.  Although the recipe calls for making this "by hand", Mike of course used his KitchenAid mixer.

I don't know why the recipe told him to make so much cinnamon sugar mix.  He tried to use as much cinnamon sugar recipe as possible on the muffins, so they came out a little sweet.  He still had quite a bit left over.

They were quite delicious and easy to make.  Mike even compared it to peach cobbler!  I think this recipe could be adapted to use pretty much any fruit.

When I printed this recipe out, it came out on two pages.  At first Mike asked me why I needed white sugar.  I told him to check the second page.  He also forgot to put the pecans in there because he didn't see it.

Not My Favorite Macaroni and Cheese

I think I found this recipe when I was looking for ways to use up cottage cheese.  I only made half the recipe since I didn't want a lot of it in case I didn't like it.  There is more "other stuff/sauce" than actual pasta used in this recipe.

Mike thought the Mac and Cheese was ok.  Apparently he liked it a lot.  I thought it was terrible.  He thought the bread crumbs were a little over the top.  He claims they only put that on "fancy mac and cheese".  That's fine by me, one less step that I would have to do.  I told him that if I made this again, he would have to eat the whole thing since I really have no interest in eating it again.

I found Chuck's Favorite Mac and Cheese recipe on AllRecipes.  I don't think Chuck and I have the same taste in food because this was definitely not my favorite mac and cheese at all!

Sweet Potato Biscuits



I had half a sweet potato left over from making a Vitamix recipe. I didn't want to throw it out, and Mike didn't want to eat it. I also tried asking Mary and Joseph if they liked sweet potato, but alas they did not.

I went on the Vitamix website and used the "Find Recipes" function to try to find a recipe that used sweet potatoes. That's when I saw the recipe for Sweet Potato Drop Biscuits. I knew that Issac and Esau love the Pillsbury biscuits and that Mike was going to visit them soon. He can bring these biscuits over for them!

Here is the dough after it has been mixed.  I didn't use the Kitchenaid mixer at all!
