Guiltless, Tasteless, Oven Fried Chicken


I love fried chicken, but I don't like to deep fry food (and I don't like Mike frying food because he always seems to get serious burns when he does).  I've been looking for a good oven fried chicken recipe for a while.

I stumbled upon this Guiltless Oven Fried Chicken and saw that it uses mayonnaise.  This was great since I was trying to use up  my mayonnaise as well.  Unfortunately this dish tasted terrible.

I think part of the problem is that the bread crumbs did not stick to the chicken very well.  I think this was because of the mayonnaise.  After flipping it in the oven to make it crispy on both sides, half the breading was missing on one side.  It had stuck to the foil, even though I had sprayed the foil with cooking spray.  The chicken also did not have any flavor, even though I used the spices specified in the recipe.

Fettuccine with Creamy Tomato Sausage Sauce


I found this recipe for Fettuccine with Creamy Tomato Sausage Sauce while trying to use up more heavy whipping cream.

I had some egg noodles left over from the Beef Stroganoff, so I used that instead of Fettuccine.  I figured it would be OK since both pastas are quite wide.

I only made half the recipe since it sounded like a lot of food.  It still turned out to be quite a lot of food for one person to eat.

I did like dish, but again, it felt a little heavy, and not very healthy (as is expected from a dish with heavy whipping cream...)

Thai Chicken With Basil


Mom gave me a basil plant since I mentioned that I was using a lot of it in many of my recipes.  I was trying to use up my heavy whipping cream at the time, so I was making many Italian cream sauces.  Now that I have used up the heavy whipping cream, I don't need as much basil.  Since I still have the plant, I am now looking for recipes which will use it.

I searched for recipes with chicken and basil in them, and the picture in this Thai Chicken with Basil recipe looked good.  I had all the ingredients, so I thought why not?

In general the dish was tasty, but it tasted like soy sauce chicken.  This could have been due to the fact that I put a little too much soy sauce  in it.  I halved the recipe since I only had two boneless skinless chicken thighs instead of the four chicken breasts listed in the recipe.  I ended up putting a whole tablespoon of soy sauce instead of 3/4 of a tablespoon of soy sauce.  I don't think it should have made that much of a difference though, especially since it was in the marinade anyway.

Pasta Milano


While continuing my quest to use up the heavy whipping cream, I stumbled on a recipe for Pasta Milano Soup.  It can be made into a sauce by adding more flour to thicken it, and it can then be served over pasta, as I did.

I didn't use sun dried tomatoes since I don't like the taste of them.  Instead I used the same amount of canned tomatoes.  This would obviously change the taste of the dish, but I like how it turned out.  I also used baby Portabella mushrooms instead of button mushrooms.  I just like the taste of Portabella mushrooms better.

I probably would not make this dish again since it is not very healthy, maybe once in a while, as a treat.
