I wanted to make a pasta dish that included spinach. I found this Spicy Smoked Sausage Spinach Skillet recipe that was on the same website as a Chicken and Broccoli recipe that I tried.
I used 2 pieces of Aidell sausages from Costco to make this dish. The cream cheese that was in the refrigerator smelled funny, so I threw it out and did not use any cream cheese in the recipe. I used a can of regular diced tomatoes instead of one with green chilies, since I don't like chili. I don't know how much Cheddar Cheese I used. I just used the rest of the cheese I had in the bag.
I thought the dish tasted delicious. I even tasted it before I added cheese to it and it was still good. I think the pasta tasted even better because it was cooked in the chicken broth and tomatoes.

Orange Chicken
Mom gave me a number of oranges from her orange tree. I decided to try to use those oranges to make Orange Chicken. I then found this orange chicken recipe.
I didn't have any Panko breadcrumbs since Mike used all of it, even though he only needed half of it, for the Chicken Parmesan recipe. I used regular breadcrumbs instead. I also didn't have Mirin, so I didn't use any. I also don't like Siracha sauce, so I didn't put any in there either.
The dish turned out OK. The chicken wasn't as "crunchy" as it could have been. This might have been because I didn't use Panko breadcrumbs. Also, the smaller pieces of chicken turned out a little overcooked. I would cut the chicken into larger pieces next time.
Also, the recipe said to add the cornstarch directly to the sauce that was cooking on the stove. This caused the orange "glaze"/sauce to have lumps of cornstarch in it. I then remembered that Mom always told me to add cornstarch to cold water and then add that to the sauce. I put some more cornstarch to about a quarter cup of cold water and added it to the sauce. After I did that, the sauce started thickening up.
I squeezed almost two whole oranges in order to get the amount of orange juice I needed to make half the recipe.

Shrimp Scampi
I love Shrimp Scampi and have always wanted to try to make it at home. Mike was nice enough to find this Shrimp Scampi recipe, which does not use lemon, since I didn't have any lemon at home.
Mike wasn't sure how much Parmesan Cheese we had, and wanted to err on the side of caution, so he didn't put much Parmesan Cheese in it. It turned out rather bland. When I added some Parmesan Cheese to my dish, it was pretty decent.

Cheesy Chicken Orzo
This dish was really bland. I'm not sure how the people on the website where Kim obtained the recipe thought that it was any good at all.
Technically the recipe, which can be found here, did not call for spinach, but Kim wanted to make the dish a little healthier.
Kim also forgot that she doesn't like Orzo pasta. It's been a while since Kim made Orzo, and now she remembers why she doesn't make it. It's a little soggy. Perhaps if she cooked it a little less, it would have been better. Hopefully she will be able to find another recipe with Orzo, since she has a little over 2/3 of the box of Orzo left.
